As a Head Sommelier, you will be our wine expert in the hotel responsible for helping us to create, update and supervise wine service. Ultimately you will delight our guests by helping them to choose the best wine for their personal taste to enhance their experience. You should uphold the highest standards and ensure the guest experience is in line with the Nobu Hotel London Portman Square standards. Your tasks as Head Sommelier will include but will not be limited to:

  • Creating, maintaining and updating the wine list in coordination with the culinary and Food and Beverage management teams
  • Recommending food and wine pairings for our all of our guests and help curate event menus
  • Advising guests on our variety of wines based on their personal tastes, price and food choices
  • Managing wine cellar and ensure it’s fully-stocked including the correct storage
  • Training the Food and Beverage teams on available wines to ensure that their knowledge is always up to date
  • Negotiating purchase prices, retros and promotions with suppliers ensuring a positive relationship is always maintained
  • Organising wine tasting days or “wine of the month” events and initiatives with the Food and Beverage management team
  • To be an ambassador for Nobu as well as someone who embodies our values and commitment to our teams

EXPERIENCE

  • Minimum 4 years experience in Sommelier role.
  • WSET accreditation would be adventageous
