KEY RESPONSIBILITIES
- Calculate and monitor daily, weekly, and monthly food and beverage cost percentages across all outlets, benchmarking against approved budgets and targets.
- Analyze actual versus theoretical food and beverage costs, identifying variances and investigating root causes with relevant department heads.
- Prepare detailed cost reports and dashboards for senior management, highlighting trends, risks, and improvement opportunities.
- Review menu pricing in collaboration with the culinary and operations teams to ensure profitability targets are maintained.
